These
cakes use fresh cream as the chief ingredient
to embellish and enrich the cake and enhance
its textural quality. Fresh cream cakes
always need to be refrigerated or the cream
will sour. They taste best when eaten as
fresh as possible. |

Black
Forest Cake - One of the most popular
fancy cakes, the Black Forest Cake is actually
a light chocolate sponge, moistened traditionally
with Kirsch, a cherry brandy brewed in the Black
Forest region of Germany. The cake is layered
and covered with a rich, vanilla cream with chopped
cherries. Grated chocolate is pressed into the
cream along the sides while the top is deliciously
decorated with lots of chocolate flakes and curls
as well as ruby-red cherries. |

Cheese
Cakes - Cheese Cakes are now becoming
more accepted in India. Made from a basic mix
of cream cheese and set on a base of biscuit crumbs,
the Cheese Cake tastes very different from the
standard cake. Cheese Cakes can be both sweet
or savoury, and taste great by themselves too.
Their decoration includes a heavy topping of flavoured
fresh cream to which chunks of fresh fruit may
be added. Cheese Cakes are among the top-selling
premium cold desserts in the West today.

Cashew
Mocha Cake
Mocha cakes are top-of-the-line cakes with a subtle
flavouring of coffee. Mocha comes from a seaport
of the same name in Yemen from where the strongly
flavoured Arabian coffee was exported to Europe.
In the USA, Mocha cakes had the coffee flavouring
blended with chocolate. In India, we have gone
a step ahead and added cashews to make this marvellous
cake truly a food for the Gods.

Zebra
Torte Cake
This is visually delightful cake. A chocolate
